Red Beans and Rice Recipe

1 pound red beans

3 quarts cold water

4 onions, chopped

4 toes of garlic, chopped

2 pounds smoked sausage

2 pounds ham trimmings

Salt & pepper to taste

Hot sauce (optional)

Creole seasoning (optional)

  1. Pick over beans and wash thoroughly.
  2. Soak overnight
  3. Boil beans with onion, ham and garlic over a strong heat using a heavy pot.
  4. When beans are tender, add sausage that has been cut into 6 inch lengths
  5. Continue to cook for 30 minutes adding more water as necessary.
  6. Add any desired seasonings, to taste (hot sauce, cajun/creole seasoning, etc.)
  7. Serve over steamed rice.
