File' powder was used by the Chocktaw Indians of Louisiana. The powder is made from the leaves of sassafras plants.

File' can be used to thicken and flavor gumbo. Add about 1/2 teaspoon (more or less to taste) of Cookin' Cajun Gumbo File' to your gumbo while it's cooking. It can also be sprinkled lightly over each serving.
